Meal Plan February Week 2

I didn't meal plan this past because I was out of town.  So the plan for this week is:

Lentil Tacos w/ Salad
Pad Thai
Szechuan Tempeh
Comfort Loaf w/ Gravy and Roasted Sweet Potatoes
Pasta Salad
Three Spicy Sisters Stew

I don't assign days so it keeps everything flexible.  This should use up all the produce from the box, except the potatoes.

Friday Night Workout

Tonight I went to the gym.  Which is definitely the norm for a Friday afternoon.  But I was out of town in the beginning of the week, so I slacked off a bit.  Since I ran yesterday, I decided to do resistance today.  I never go in with a real plan, just figure it out as I go.

I started with a warm up and then moved to core.  I did ball crunches with a six pound weight, alternating with side crunches.  Three sets of 15 reps.  I like doing three sets, it seems like the perfect number.

Then I decided to do upper body, mainly chest, biceps and back.  So I alternated ball pushups, one-legged bicep curls, and cable pull downs.  I tend to do exercises in a circuit.  I feel like I get more done in less time, since one muscle group is resting while the others are working.  I also like to make things harder than they should be, like doing curls on one leg.  It just makes the rest of the body work a little harder and you get more bang for your buck.

I moved on to lower body and did standing squats with one-legged dead lifts.  I may have overdone the weight on the dead lifts because now my left hamstring is feeling a little twingy.  Anyway, a decent work out for a Friday afternoon.

I got home and made dinner, like usual.  I was eager to use some of my new produce and I found the perfect recipe.  I made Savory Sausage and Peppers from Vegan on the Cheap.  I really like this cookbook.  All the recipes are really easy and I almost always have everything on hand.  I am also obsessed with Field Roast Apple-Sage Sausages and this seemed like a great new way to make them.  Usually I just saute them with peppers and add penne.  Sometimes I add tomato sauce.  But this recipe called for peppers, carrots, and tomatoes, and I served it over rice.  It came out great!

After dinner, Jon left to go backcountry snowboarding.  They are driving up and staying overnight so they don't have to get up so early in the morning.  So, since I had the house to myself, I decided to play a little WoW.

I have been playing WoW since it released.  Lately my interest has tapered off, but it is still a fun distraction.  I deleted my never played warrior to make room on the server for a new worgen druid.  It's hard to delete a character, but I really hate melee.  I am definitely a caster at heart.

Tomorrow I hope to go for a run, and then clean up the house a bit.  I think I hear some cupcakes calling my name.

Intro

Well, Hello there!  My name is Beth and this is my blog.  I am starting it because I have words inside my head that are waiting to burst out, and who better to clean up the mess than you, internet.

A few words about me, then.  I am a 28 year old software engineer.  It's not as boring as it sounds, because I work for NASA.  That's right, I am a rocket scientist.  Well, maybe not quite, since I don't actually work with rockets.  And I don't know anything about propulsion or rocket fuel or attitude control or really anything about how to put a rocket together.  Ok, so maybe I am not a rocket scientist, but the software I write does end up on the top of one and is launched into space.  It's really the best job I could ask for because it allows me to be creative, write code, and have at least a small part in making scientific discoveries happen.

I am also a science fiction nerd, if you couldn't guess that by my chosen career.  I am particularly fond of the Star Trek and Stargate franchises, but I am not a Trekkie.  Even though I have been to a Star Trek convention.  And own the movie Trekkies.  And used to have a poster of the bridge crew of the Enterprise-D on my bedroom wall.  Well, that part is not true, it was my brother's wall.  And Worf had really creepy eyes that I swear would follow us wherever we moved.

I have been married to the love of my life for 8 months now.  I can truly say that being with him has made me a better person, and I will always love him for that.  We have a cat and a ferret.  Don't worry, they get along great.  If by getting along you mean that the cat stalks the ferret and the ferret is oblivious to the cat's existence.

I love to read, especially thrillers.  I love a good book that grabs you and makes you stay up late and be tired for work the next day.  It's worth it.  I just finished What the Night Knows by Dean Koontz.  I also like fantasy and non-fiction like Freakonomics and The Elegant Universe.

A few months ago I decided to learn how to knit, and have since about tripled my hat collection.  I like making hats because they don't use a lot of yarn, they are fast, and it isn't hard to make something that will actually fit on your head.  I enjoy other crafty things too, like cross-stitch and sewing.  Making things is like writing code.  It is the sense of satisfaction you get after completing something you worked on; whether it's a new hat, or a computer program, or just something pretty to look at.

Last year I decided to become a runner.  I have always admired runners.  Their passion about something so simple that so many take for granted.  Their determination to meet goals.  And, let's face it, it's a rather practical skill when you need to chase down a bad guy.  So I decided to run the local 5K.  I followed the Couch-to-5K program and did ok in the race.  I then found a running club in my city and decided to do the local 10K.  Running with the group is so inspiring.  There is nothing like peer pressure to get you to do that extra lap.  I want to do a half-marathon this summer.

I like to cook.  A lot.  Almost as much as I like to eat.  Which is good because my husband can make a total of three dishes.  I cook mostly vegan and usually pretty healthy.  Sometimes I eat eggs or cheese, but never meat or fish.  I came to this decision a few years ago after learning about the realities of corn-fed beef.  I never really like meat to begin with, and never seafood, but I didn't know how to cut it out.  Once I made the decision it was a huge relief.  I always have loved animals and it was soo good to finally not feel like a hypocrite.  It also forced me to learn to cook and explore new foods.  I was a very picky kid all through college, but now I will try almost anything.  I just subscribed to Door-to-Door Organics, which is a grocery delivery service.  The first box came today!


That's 4 apples, 3 potatoes, 2 avocados, 2 pears, 4 yams, 3 oranges, 1 lemon, 2 red bell peppers, 2 kiwi, a butternut squash, celery, swiss chard, lettuce, a bag of baby carrots, and 6 roma tomatoes.  All organic and delivered straight to my door.  I try really hard to eat healthy, and having vegetables delivered automatically will force us to eat them.  I am a little too excited about this.

Anyway, enough about me.  I intend to write mostly about cooking, knitting, and running, but I am leaving it open to anything that may be on my mind.
